RECIPE FOR BLACKBERRY AND PINEAPPLE FRUIT SALAD WITH CREAM CHEESE TOPPING
- Two (2) packages blackberry jello gelatin - 3 ounce each
- Two (2) cups of boiling water
- One (1) large package blueberries - 14 ounce
- Two (2) cans crushed pineapple - 8 ounce
- One (1) package softened cream cheese - 8 ounce
- One (1) cup of sour cream
- 1/2 cup of sugar
- One (1) teaspoon vanilla flavoring
HOW TO PREPARE
Place the cream cheese on the counter to soften to room temperature about 20 minutes or so before preparation time.
Using a large size mixing bowl, add the boiling water and then sprinkle in the blackberry jello gelatin and stir to dissolve the gelatin and mix together well. Add the blueberries and crushed pineapple and combine well. Place this mixture in the refrigerator to chill until needed.
Using a medium size mixing bowl you will add the soften cream cheese and then beat until fluffy and smooth. Add the sour cream, sugar, and vanilla flavoring and then combine thoroughly. After the blackberry and pineapple salad is set, spread the cream cheese topping evenly over the top and then serve. You might also like to simply add a dollop of the cream cheese topping over individual servings rather than over the entire dessert which is your choice of course.
